Pork with mustard greens (Lai xaak)

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Fish with mustard greens , mustard greens stir fry, mustard green raw chutney,  boiled mustard greens are some of the mustard greens recipes.    Pork with mustard greens is a very special recipe of  Assam . Use full grown mature and soft mustard green leaves only. This recipe is very simple and very less spices are used. Assamese cuisine  is in fact less spicy compared to other Indian cuisines.  Pork with mustard greens is served as a side dish with rice. Okra or ladies' fingers is a very healthy vegetable loaded with nutrients. I like to eat okra and like to add it in many dishes.  I add okra in fish curries, meat curries,  veg curries, lentil curries etc. Sometimes when I get no time for cooking 2-3 dishes I add okra in meat or fish currys. I often cook okra stir fry. But sometimes getting bored of cooking and eating the same dish. So  adding mustard seeds paste brings new taste to the recipe. Pork with colocasia leaves (kosu xaak)

Colocasia  is a tropical plant found in entire northeast India.  Its every part is edible.  Its leaves, stems, flower and roots.  But Some may not like it. And some may be allergic to it. Amroli poruar tup or the red ant eggs  are consumed by the people of Assam as a part of their traditional cuisine at the occasion of Rongali bihu, celebrated in the month of April. It is basically the tradition of Ahom and some other communities of upper Assam. The sourcfes of red ants are big tree specially mango tree or jackfruit tree. Methi (fenugreek leaves) bhaji recipe

Methi or fenugreek leaves bhaji is a simple and one of the healthiest recipes of leafy vegetables . The taste of fenugreek leaves is little bitter and so it is good for diabetic patients . Here I am going to share a simple dry methi bhaji recipe. I am adding potato in this recipe. But adding potato is optional. You can also add small pieces of chicken or pork to make non-veg version of this recipe. The cooking methods and ingredients are all same. Only difference is that for non-veg version, chicken or pork should be added instead of potato. The recipes can be sreved as a side dish with rice or roti. Fish: The true love of Assam

There are many local fishes found in Assam . Fish is an important part of Assamese cuisine. The mighty river Bhramaputra is a good source of some wonderful spices of river fishes. The local fishermen catch fishes using simple net in river Bhramaputra and sold them in the local markets. In the sub-rivers also many fishes are found which are also as good as to taste as the fishes of Bhramaputra. Fishes are found in ponds and paddy fields also, specially during summer in rainy seasons. Local boys catch those fishes for enjoyment and for selling in the local markets. Sometimes ponds' fishes tastes much sweeter than river fishes. There are many indigenous fishes found in Assam. Assamese love to eat fishes by making sour fish curries ( masor tenga ) or by grilling on open fire and making " pitika " and by cooking in banana or turmeric leaves. Upma is a South Indian dish. Vermicelli  (in Assamese savyoi) upma is a very tasty recipe.  It can be served as a breakfast dish but I like to have it in the evening with a cup of tea. In South Indian style curry leaves and black mustard seeds is very essential in making upma recipes.  Vermicelli upma INGREDIENTS: 1 cup vermicelli 1/4 cup chopped french beens 1/4 cup chopped carrots 1/4 cup peas 1/4 cup chopped onions 2 tbsp tomato sauce 1/4 cup chopped coriander leaves 1/2 tsp cumin powder 1/2 tsp coriander powder 1/2 tsp red chilli powder 1/2 tsp garam masala powder 1/2 tsp mustard seeds  10-12 curry leaves  2-3 tbsp oil Salt to taste METHOD: Dry roast vermicelli on a medium heat until they turns golden colour. Lai Xaak or Mustard greens is a green leafy vegetable. Mustard greens contain a lots of vitamins and minerals and as such very healthy and very tasty too. I love this green leafy vegetable very much . This vegetable has a wide use in Assamese cuisine .  From making salad, chutney and many veg recipes , a very tasty fish curry recipe can also be made. It's a very simple recipe,  made without spices. Assamese recipes are less spicy recipes but much more healthy.
