Omelette with Spinach curry recipe


Spinach is the king of green leafy vegetables with lots of health benefits. Spinach is one of the richest source of iron,  vitamins and minerals. Tender, fresh spinach is an excellent ingredient in many Indian dishes.  Eat spinach as raw or cooked for excellent health benefits this winter. Add spinach in salad,  make chutney,  make fritters or add as an ingredient in fish and meat curry recipes. If you like eating spinach,  I'm sure you'll like the below spinach recipes :

Omelette with Spinach curry  is a delicious Indian style omelette curry recipe served as a side dish with rice or roti. This recipe is a very easy to prepare.  Make the omelette separetly and then the spinach curry separately.  At last just add the strips of omelette into the curry.  As I preferred less spicy,  I'm adding less spices in this curry but you may modify your curry by adding more spices if you like to eat more spicy food.

INGREDIENTS:

  • 4 eggs
  • A bunch of spinach
  • 1 onion chopped
  • 1 tomato chopped
  • 1/2 cup cream
  • 1/3 tsp whole cumin seeds
  • 1/3 tsp ajwain
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste




METHOD:


  1. For omelette :- in a small bowl beat eggs by just adding only salt and make a large omelette. You can add powdered spices and chopped onions,  chills, coriander leaves and tomatoes etc., but I made it plain. Now transfer the omelette to a cutting board and with the help of a knife make slice into strips.
  2. Wash spinach under running water.  Boil spinach, drain and let it becomes cool.
  3. In a blender  blend the boiled spinach into a fine paste.
  4. In a pan heat oil. Add chopped onions.  Fry till translucent.  Add chopped tomatoes.  Fry till oil separates.
  5. Now add cumin powder, coriander powder, red chilli powder and salt. Stir and fry. Add spinach  paste from the blender. Mix well.
  6. Add omelette strips and saute over high heat till glossy.
  7. Add 1/4 cups of water and bring to boil. Simmer and add garam masala and cook for 5 minutes.
  8. Add cream. Mix well.
  9. Remove from heat. Serve with roti or rice.

Ahom Bogori (Peach)

Ahom Bogori (Assamese আহোম বগৰী) in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam.

It is believed that the name 'Ahom bogori' is derived from the Kingdom of Ahom. It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam. The Ahoms have established their dynasty and ruled the Ahom Kingdom, the present day Assam for about 600 years.

During this lockdown period everyone from ordinary people to celebrity chef, from movie star to prominent personalities are cooking different food at home and then posting the pictures on different social media platforms. Today Australian Prime Minister made Indian samosas and posted the picture on twitter.

Australian Prime Minister Scott Morrison shared today on twitter samosas and mango chutney made by him and wishes to share it with Indian Prime Minister Sri Narendra Modi.

He twitted : "Sunday ScoMosas with mango chutney, all made from scratch - including the chutney! A pity my meeting with @narendramodi this week by video link."

Black Mustard Chutney (Panitenga and Kharoli)

Black mustard seeds 
Today's recipe is about a chutney made from black mustard seeds. Many of you may have tasted yellow mustard seeds' chutney but have you ever tasted black mustard seeds' chutney ? Well, Black mustard seeds taste little bitter than yellow mustard seeds. There are two different black mustard seeds' chutney. One is called panitenga and the other is called kharoli in Assamese. The taste of panitenga is not bitter but little tangy and very strong and the taste of kharoli is also not bitter but has a strong mustard flavour.

Black mustard seeds are used to produce mustard oil. Mustard oil is an integral part of Assamese cuisine. Assamese people use mustard oil in everyday cooking. They also use raw mustard oil in salads and pitikas. We can say mustard oil is an Assamese version of olive oil. But mustard oil has a strong smell and taste and therefore everyone may not like to consume it as raw.

Doi Potol / Potol Posto

Doi potol or potol posto is a Bengali style pointed gourd curry recipe where pointed gourd is cooked with curd and poppy seeds paste. This is a very popular recipe and often served in marriage parties. This recipe is a very spicy recipe cooked in a thick curd based gravy. Here in my recipe I have used minimum spices but you can adjust the amount of spices according to your choice.

Edibble fiddlehead ferns are available throughout Assam  and is Assamese people's very favourite.  Fish is again very favourite.  The mighty river Brahmaputra and its sub-rivers are wonderful sources of some good river fish. We assamese love fish. We can eat fish everyday. 
The scientific name of Elephant Apple  is DIllenia indica. In assamese it is called Ou tenga. Elephant apple is quite popular in Assam. Many different fish curries can be made using elephant apple. Pickle and sweet and sour chutney can also be made from elephant apple. The edible part of an elephant apple can be eat as raw. My mother used to make a raw elephant apple chutney which is very tastey. Elephant apple has a sweet and sour taste. Some elephant apple taste very tangy. So before adding to any fish curry you should taste its tanginess. Otherwish excess use of elephant apple in any curry will destroy the taste. So add as much amount of elephant apple as required.
