Easy vegetable gnocchi is a simple recipe I cooked last Sunday. I have not cooked it in traditional Italian style but kept it simple by adding tomato sauce, pepper and vegetables.
You can get gnocchi at the department stores but for better taste use home made gnocchi.

INGREDIENTS:
- 2 cups home made gnocchi or gnocchi brought from the market.
- 1 cup chopped vegetables (carrots, French beans, broccoli etc.)
- 2-3 tbsp tomato sauce
- 1 tbsp cooking oil
- 2-3 cloves of garlic, chopped
- 1/2 tsp pepper
- 1/2 tsp Italian seasoning
- 2-3 basil leaves
- Salt
METHOD:
- Boil the chopped vegetables. Drain and keep aside.
- In salty water boil gnocchi. Drain and keep aside.
- In a pan heat oil. Add chopped garlic cloves.
- Add gnocchi and vegetables. Add tomato sauce, salt and pepper. Toss around in hot oil for few minutes.
- Add seasoning and chopped basil leaves.
- Serve hot.
