Gnocchi (pronounced as nyoki) are a variety of pasta originating from Italy.  Potato Gnocchi (Gnocchi de patate) are like small and soft dumplings made from potato, flour and egg. You can buy potato gnocchi from the market but it's actually very easy to make at home.  Here is a step by step guide with photographs about how to make potato gnocchi at home.

INGREDIENTS:

  • 5 medium sized potatoes 
  • 1 egg
  • 2 cups of flour (maida) 
  • Salt 
METHOD:
  1. Boil potatoes in salty water. 
  2. Peel potatoes. 
  3. In a large bowl, mash the potatoes with the help of a fork or potato masher. 
  4. Add egg and mix well with the mashed potatoes. 
  5. Now add flour. Make a nice dough. Add more flour if required and knead the dough properly until form a ball. 
  6. Divide the dough into 8 equal parts. Roll each parts into long and thin shape. 
  7.  With the help of a knife cut into small pieces. Mark each small pieces with the help of a fork to make ridges that can hold sauce. 
  8. Now in a heavy bottomed pan heat water. Add pinch of salt. 
  9. Add the small dumplings into the boiling water and cook for 3-4 minutes.
  10. Drain and your gnocchi are ready. Toss in sauce or cook as you like.

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable.   Malabar spinach is known as puroi xaak in Assamese and pui shaak in Bengali. Malabar spinach is also known as basella alba, which is a vine with sort stems and thick heart shaped leaves. There are two varieties of malabar spinach - green and red. Malabar spinach is rich in vitamin A and C, iron and calcium.  The one that I am using in this recipe has green leaves with reddish purple stems. Ahom Bogori (Peach)

Ahom Bogori (Assamese āφāĻšোāĻŽ āĻŦāĻ—ā§°ী)  in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam. It is believed that the name ' Ahom bogori ' is derived from the Kingdom of Ahom . It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam. The Ahoms have established their dynasty and ruled the Ahom Kingdom, the present day Assam for about 600 years.  We call this fruit as ahom bogori from childhood....

Water Hyacinth : The Most Amazing Vegetable I Found During My Visit To Tipam

 Food and travel go hand in hand. I always like to try new food, specially the local food whenever I travel. Polygonum microcephalum is a green leafy vegetable found in  Assam.  It is called  'modhuxulung ' in  Assamese  . It is sour in taste specially used in making sour lentil soups and sour fish curries.
