Omelette with Spinach curry recipe


Spinach is the king of green leafy vegetables with lots of health benefits. Spinach is one of the richest source of iron,  vitamins and minerals. Tender, fresh spinach is an excellent ingredient in many Indian dishes.  Eat spinach as raw or cooked for excellent health benefits this winter. Add spinach in salad,  make chutney,  make fritters or add as an ingredient in fish and meat curry recipes. If you like eating spinach,  I'm sure you'll like the below spinach recipes :

Omelette with Spinach curry  is a delicious Indian style omelette curry recipe served as a side dish with rice or roti. This recipe is a very easy to prepare.  Make the omelette separetly and then the spinach curry separately.  At last just add the strips of omelette into the curry.  As I preferred less spicy,  I'm adding less spices in this curry but you may modify your curry by adding more spices if you like to eat more spicy food.

INGREDIENTS:

  • 4 eggs
  • A bunch of spinach
  • 1 onion chopped
  • 1 tomato chopped
  • 1/2 cup cream
  • 1/3 tsp whole cumin seeds
  • 1/3 tsp ajwain
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste




METHOD:


  1. For omelette :- in a small bowl beat eggs by just adding only salt and make a large omelette. You can add powdered spices and chopped onions,  chills, coriander leaves and tomatoes etc., but I made it plain. Now transfer the omelette to a cutting board and with the help of a knife make slice into strips.
  2. Wash spinach under running water.  Boil spinach, drain and let it becomes cool.
  3. In a blender  blend the boiled spinach into a fine paste.
  4. In a pan heat oil. Add chopped onions.  Fry till translucent.  Add chopped tomatoes.  Fry till oil separates.
  5. Now add cumin powder, coriander powder, red chilli powder and salt. Stir and fry. Add spinach  paste from the blender. Mix well.
  6. Add omelette strips and saute over high heat till glossy.
  7. Add 1/4 cups of water and bring to boil. Simmer and add garam masala and cook for 5 minutes.
  8. Add cream. Mix well.
  9. Remove from heat. Serve with roti or rice.

Hey!  I'm back again with another Green chilli pickle. Hope you are not bored with my continuous pickle recipes. Summer is meant for pickling and I have still many pickles to made in my mind. Hope you liked my previous green chilli pickle recipe. Today I'm going to share an instant green chilli pickle recipe which you can serve to your guests instantly after making. This green chilli pickle is very easy to prepare. The taste of this pickle is hot and sour.  This is similar to the chilli chutney that is usually served in marriage parties. I'm using medium hot Indian variety of  green chillies for making this Instant pickle. Green chillies are dipped into the mustard seeds' paste and the use of vinegar makes the pickle sour to taste. Peanut and Curry Leaves Chutney

An Indian meal is incomplete without a chutney. Chutney is a type of sauce basically a dry base sauce originating from India. There are varieties of chutney recipes which are served with the main course as a side dish or as a dip with fritters, samosa, pakora, idli, dosa etc. 

Chutney recipes are very easy to prepare.  Most of the chutney recipes are prepared by grinding and are basically made from raw vegetables. Fish Egg Bhurji | Scrambled Fish Egg and Bamboo shoots

My blog has completed 3 years of its blogging journey this August, but the blog still needs to grow and I have still need to learn many things. This is the first post of the 4th year of my blogging journey and it is about a simple recipe of scrambled fish egg or fish egg bhurji . I made this recipe little special by adding "khorisa"- grated and fermented bamboo shoots. 

Fish usually lay eggs during monsoon season. Therefore there is a ban on fishing during monsoon in local rivers and ponds in Assam so that the local fishes do not get extinguished. The exported fish and fish from the fisheries are available in the market and fish roe or fish eggs are also widely available during the season. It is usually served as fritters, or as deep fried or shallow fried. Making scrambled fish eggs is very easy and it tastes very yummy.
