Easy Carrot Cake Recipe


 A carrot cake is a cake that contains carrots.  The recipe of carrot cake is not a new one.  The origin of carrot cake is a disputed one. It may be England, French or Switzerland that claim its origins.  The carrot cake were made for childrens specially for birthdays. Modern carrot cakes are single layer or double layered cakes with white cream frosting decorations.

Today I made a single layer simple carrot cake with simple ingredients. It's a very easy cake recipe and good for beginners who wants to know how to bake a cake.

Easy Carrot Cake Recipe

INGREDIENTS:
  • 1 1/2 cup all purpose flour (maida)
  • 2 eggs
  • 1/2 cup powdered sugar 
  • 1/2 tsp salt 
  • 1/2 cup unsalted butter or vegetable oil 
  • 1 cup grated carrots 
  • 1/2 cup round slices of carrot 
  • 1 tbsp baking powder 
  • 2 tbsp tutti frutti 
METHOD:
  1. In a large bowl beat eggs. 
  2. Add unsalted butter or vegetable oil. Mix well. 
  3. Add maida, baking powder, salt and powdered sugar. Mix everything well to make a lump free batter. 
  4. Add grated carrots and mix well. 
  5. Add tutti frutti and mix well. 
  6. Grease oil or butter in a cake pan. 
  7. In the bottom of the pan place the round slices of carrots evenly. 
  8. Pour the batter in the pan. 
  9. In a preheated oven, bake for 30-35 minutes at 180 degrees.

Water Hyacinth : The Most Amazing Vegetable I Found During My Visit To Tipam

 Food and travel go hand in hand. I always like to try new food, specially the local food whenever I travel. My recent visit to Tipam was not an amazing one in terms of testing food, as we didn't  find a good  eatery. But the most amazing thing happened was that we found a vegetable vendor who was selling water hyacinth (meteka) in his bicycle. I once tasted a water hyacinth dish in my mom's place but haven't cooked it myself. So I bought two bunches of water hyacinth's leaves with stems from him. As he was also selling water hyacinth's blossoms, I bought it too which was a new vegetable for me.  Water hyacinth  Water hyacinth's blossoms  Tipam is located in the Naharkatia Tehsil of Dibrugarh district of Assam.
