Easy Dhokla Recipe

Dhokla is a Gujarati recipe made from gram flour or besan. It is generally served as a snack. Here is a easy dhokla recipe I'm going to share today.

INGREDIENTS:

1 cup besan (gram flour) 1 cup water or as required 1+ 1/2 tbsp lemon juice 1 pinch turmeric powder 1/3 tbsp cumin powder (jeera)3/4 tbsp baking soda 1+1/2 tbsp lemon juice 1 tbsp refined vegetable oil 1 tsp mustard seeds 2 sliced green chillies 12-15 curry leaves Salt to taste 


METHOD:

In a large bowl take gram flour. Add 1/2 tsp of salt, turmeric powder, cumin powder, baking soda and lemon juice. Add water and mix all the ingredients well. Allow the batter to ferment for 1 hour. After one hour grease the utensil with oil. Stuffed Chilli Peppers

Stuffed chilli peppers are long green chilli peppers filled with spicy potato stuffing. These are my personal favorite.  You can serve these as a snack or as a side dish with rice.

INGREDIENTS:


2 big green chilli peppers Oil to fry For batter :
1/2 cup chickpea flour 1 tbsp rice flour or semolina 1/2 tsp cumin powder 1/2 tsp coriander powder 1/2 tsp turmeric powder 1/2 tsp red chilli powder Salt to taste 
For stuffing :

1 big potato 1 onion finely chopped 1/2 tsp turmeric powder 1/2 tsp cumin powder 1/2 tsp coriander powder 1/2 tsp red chilli powder  1/2 tsp garam masala  1/2 tbsp mustard sauce 2 green chillies finely chopped  1/4 cup chopped coriander leaves  Salt to taste 1 tbsp mustard oil

Biscuit Cake | Leftover Biscuits Cake

Biscuit cake is a very simple cake recipe.  You can use any biscuit of your choice.  Here I have used leftover broken biscuits to make thisdelicious leftover biscuits cake. It is a very simple recipe and good for beginners who wants to know how to bake a cake.

INGREDIENTS:
1 cup broken biscuit 1/2 cup all purpose flour (maida) 1/2 cup powdered sugar 1/2 cup unsalted butter or vfegetable oil 1 tbsp cocoa powder 1 tbsp baking powder METHOD: Grind the broken biscuits to a fine powder.In a large bowl beat eggs. Add unsalted butter or vegetable oil. Mix well. Add biscuit powder, maida, baking powder, powdered sugar and cocoa powder. Mix everything well to make a lump free batter. Grease oil or butter in a cake pan. Pour the batter in the pan. In a preheated oven, bake for 30-35 minutes at 180 degrees.

Assamese Til aru Bora Saulor Tel Pitha (Sticky Rice and Black Sesame Seeds Fritters)

Tel pitha also known as Ghila pitha are made during Bihu festivals of Assam.  Here "tel" means oil and "pitha" means dumplings or fritters made from rice(bora saul).   So "tel pitha" means rice fritters made in oil. Tel pitha can be sweet or savory.  Here in this recipe I'm using jaggery or "gur"  to make  sweetened rice fritters. These tel pitha are made from sticky rice batter.

INGREDIENTS: 1 cup sticky rice. 1/2 cup jaggery 1/2 cup black sesame seeds 1/3 cup of water or as required to make the batter Any refined vegetable oil. METHOD: Soak stick rice in water for at least 6 hours or overnight. Drain the water completely and pat dry. Grind the sticky rice into a fine flour. Assamese Style Heart Leaves Cooked in Banana Leaf (Mosondori Patot Diya)

Mosondori leaves are known as heart leaves because of its heart shape. Modondori have many medicinal value and are used as a vegetable in Assamese cuisine. Today I'm going to share a simple recipe of mosondori. Mosondori patot diya or heart leaves cooked in banana leaf. Serve this recipe as a side dish with rice. Here in this recipe I'm using khar.   If you don't like khar or you don't have khar, skip khar.

Goru Bihu Festival of Assam

Bihu is the main festival of Assam. Bihu is observed thrice a year. Bohag Bihu or Rongali Bihu is celebrated in the month of April every year. The first day of bohag bihu is observed on 14th April which is the last day of Assamese calendar or last day of Assamese chot mah. The first day of bohag bihu is called Goru Bihu.  Goru means cow. So that day is the bihu of cows and buffaloes. So goru bihu is related to the agricultural roots of Assam.

Dighloti and makhioto leaves
On the day of goru bihu the villagers took their cows and buffaloes to the nearby river or pond where the cows and buffaloes are washed and smeared with mah-halodhi  (black gram and turmeric paste). They are also struck with the leaves of dighalati (litsea  salicifolia)  and makhioti (flemingia strobilifera) and offered to eat bottle gourd, eggplant etc. to grow healthy.

Mustard Sauce Recipe / সৰিয়হৰ চচ

This homemade mustard sauce is very easy to prepare.  You can serve this easy mustard sauce as a sauce and also as a dip with fritters.


INGREDIENTS:

1/4 cup yellow mustard seeds (1/4 কাপ সৰিয়হ)1/4 cup honey (1/4 কাপ মধু)1 green chillies (1 টা কেচা জলকীয়া)1 small cinnamon stick (optional) (এটুকুৰা দালচেনি, কিন্তু দালচেনিৰ ফ্লেবাৰ ভাল নাপালে নিদিব)1/2 cup vinegar or just to cover up the above ingredients (1/2 কাপ ভিনেগাৰ বা প্ৰয়োজন অনুসৰি)Pinch of salt (নিমখ নামমাত্ৰ)METHOD: Mix all the ingredients and keep aside for 24 hours.
