Rice Flakes Upma

INGREDIENTS:
- 1 cup rice flakes /poha /chira
- 1/2 tsp mustard seeds
- 1/2 tsp chana dal
- 1-2 sprigs of curry leaves
- 1/2 tsp turmeric powder
- 1 onion, chopped
- 2 green chillies, finely chopped
- 1 tomato, finally chopped
- 1/3 cup chopped vegetables (French beans, cabbage, carrot, capsicum etc.)
- 2 tbsp mustard oil
- 1/2 tsp cumin powder
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala powder
- Salt to taste
METHOD:
- Soak rice flakes in lukewarm water for few minutes. Squeeze out the water and wash under running water. Again squeeze the excess water and keep aside.
- In a pan heat oil. Add mustard seeds. When seeds began to sputter, add chana dal and curry leaves. When dal becomes light brown, add turmeric powder, cumin powder, red chilli powder.
- Add chopped onions and tomatoes and saute until onion becomes translucent.
- Add chopped vegetables.
- Add salt and in medium heat cook until the vegetables become soft and tender.
- Now add soaked rice flakes. Mix well.
- Add garam masala and mix everything well.
- Remove from heat and serve hot
