Papaya khar recipe

Khar is an alkali prepared from sun dried skin of some varieties of banana. It is prepared by filtering the water from the burn ashes of the skin of the banana. This khar extract is preserved in bottles and then used to make khar recipes. A traditional Assamese meal begin with khar. There are many different khar recipes and among them Papaya khar is very popular.

Assamese Papaya Khar Recipe / অমিতাৰ খাৰ 


Papaya khar

INGREDIENTS:
  • 1 cup chopped papaya 
  • 3-4 chopped garlic cloves 
  • 1-2 tbsp Khar 
  • 1 tbsp mustard oil 
  • Salt to taste 
METHOD:
  1. Boil papaya in a pressure cooker for 1 or 2 whistles. 
  2. In a pan heat mustard oil. 
  3. Add chopped garlic cloves. 
  4. When crackling, pour everything from the cooker. 
  5. Add khar and salt 
  6. Mix well and in medium heat cook for few minutes until papaya pieces  become tender. 
  7. Remove from heat.
  8. Serve at lunch with rice.

There are many local fishes found in Assam . Fish is an important part of Assamese cuisine. The mighty river Bhramaputra is a good source of some wonderful spices of river fishes. The local fishermen catch fishes using simple net in river Bhramaputra and sold them in the local markets. In the sub-rivers also many fishes are found which are also as good as to taste as the fishes of Bhramaputra. Fishes are found in ponds and paddy fields also, specially during summer in rainy seasons. Local boys catch those fishes for enjoyment and for selling in the local markets.
