Modhuxulung (মধুশোলেং) Chutney


Polygonum microcephalum is a green leafy vegetable found in Assam. It is called 'modhuxulung' in Assamese . It is sour in taste specially used in making sour lentil soups and sour fish curries. Modhuxulung is a bushy tree with tiny white flowers.

We have a modhuxulung tree at our home. We do not consume it's flowers but it's leaves are edible and I often use it's leaves as a souring agent in making Assamese sour fish curry.

Today I am going to share a simple chutney recipe using modhuxulung leaves. Modhuxulung leaves are found in Assam only and I don't know about it's existence in any other place in this globe.  So if you don't have modhuxulung leaves, instead of modhuxulung leaves you can use any leaves which has a little sour taste.

This chutney can be served as a side dish with rice or roti (Indian bread) but it can also be served with fritters .

Assamese cuisine is less spicy in compared to the other Indian cuisines. In this chutney also I am using very less amount of oil and spices.  Every vegetable has its own taste and use of lots of spices spoiled the original taste of the vegetables. But if you like it more spicy, you can modify the taste by using more spices.

INGREDIENTS:

  • A bunch of modhuxulung leaves
  • 1 tomato
  • 1 bunch of coriander leaves
  • 4-5 green chillies
  • 1 tbsp vegetable oil
  • pinch of turmeric
  • 1/2 tsp panch phoron
  • 1 tbsp sugar
  • salt to taste


METHOD:




  1. Wash modhuxulung leaves,  coriander leaves and tomato under running water.  Now finely chopped them.  Keep aside.
  2. In a pan heat oil . Add panch phoron . When crackling add turmeric powder.
  3. Now add all the other ingredients except salt and sugar. Fry till oil separates.
  4. Add either whole green chillies or chopped green chillies.  I have added whole green chillies as I like it that way.
  5. Add salt and sugar. Mix well
  6. Cook for 5 minutes in low heat.
  7. Remove from heat and enjoy!

Pork with mustard greens  is a very popular recipe many of you may have tried but  have you tried chicken with mustard greens . Mustard greens in Assamese is called Lai xaak and chicken in Assamese is called Kukurar mankho .   Here I am back after a long time. Today I am going to share a simple recipe of Pork Curry . Its an Assamese style pork curry where I cooked it with elephant apple . Serve this tasty pork curry with rice in lunch or dinner. Dillenia Indica   commonly known as Elephant  Apple   or Ou tenga   is a fruit ,  sour in taste and very native to Assamese cuisine. Namsing : A Mishing Delicacy

 Mishing are an ethnic community living in parts of Assam and Arunachal Pradesh. Unlike other Assamese cuisines, Mishing cuisine is also unique of its kind. Mishing people are mainly non-vegetarian and rice is their main food. They eat different greens and herbs as vegetable together with fish, pork, chicken, duck meat etc. Namsing is a very popular dish among Mishing people. Namsing is nothing but dry and grounded fish . Dry and grounded fish is equally popular among other ethnic groups of Assam also but they call it hukoti .  The method of preparation of namsing is little different from hukoti. In preparing namsing Mishing people also add few herbs like colocasia leaves, long coriander etc. Small river fishes are used to make namsing. At first they clean the fishes and then dry them under sun or on smoke over stove top. After that they grounded the dry fishes together with different herbs in husking pedal (dhaki). They use bamboo tubes and filled the tubes with the grounded mixture

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Fish with mustard greens , mustard greens stir fry, mustard green raw chutney,  boiled mustard greens are some of the mustard greens recipes.    Pork with mustard greens is a very special recipe of  Assam . Use full grown mature and soft mustard green leaves only. This recipe is very simple and very less spices are used. Assamese cuisine  is in fact less spicy compared to other Indian cuisines.  Pork with mustard greens is served as a side dish with rice. Assam is a rice eating state and Assamese generally eat rice at lunch and dinner.  So this pork  recipe can be served at lunch and dinner with steamed rice. Assamese Papaya Khar Recipe / অমিতাৰ খাৰ

Khar  is an alkali prepared from sun dried skin of some varieties of  banana.  It is prepared by filtering the water from the burn ashes of the skin of the banana. This khar extract is preserved in bottles and then used to make khar recipes. A traditional Assamese meal begin with khar.
