Indian Red Lentil Soup with Lentil Dumplings/ Assamese style Bor diya Tenga Dail


I generally use sun dried lentil dumpling in red lentil soup which are easily available in markets and it also saves time.  But in this recipe I made dumplings myself from urad dal (split black gram). It is very soft and fluffy in comparison to the dried one. Dried one is little hard and you can directly add it to the dal after shallow fried.

Indian red lentil soup with lentil dumplings can also be served as a side dish with rice. It is very easy to prepare as I'm using pressure cooker to cook red lentil.  You need to soak split black gram for few hours to make dumplings. The dumplings can be prepared by dip frying instantly after the batter is blended.

INGREDIENTS:

For batter -

  • 1/2 cup split black gram (urad dal) 
  • 1 tbsp rice flour 
  • pinch of cumin,  coriander and red chilli powder 
  • salt to taste 
  • oil to fry 

For soup-

  • 1 cup red lentil
  • 1 tomato
  • 2 cup water
  • 1 tbsp mustard oil
  • 1/2 tsp fenugreek seeds
  • 2 bay leaves
  • 1/2 tsp turmeric powder
  • Salt to taste


Method:

  1. Soak split black gram for 3-4 hours.
  2. Rinse and drain then blend into a fine paste. Add all the other ingredients of batter except oil.
  3. Heat oil in a pan.  Take small portions of batter and dip fry them.  Drain and keep aside.
  4. Rinse red lentils under running water.  In a pressure cooker pan add red lentil and two cups of water.  Add chopped tomatoes. Close cooker. Bring to full pressure on high heat. Cook for 2 whistles.
  5. Remove cooker from heat. Allow to cool naturally.
  6. In a pan , heat oil on medium heat and roast fenugreek seeds and bay leaves.  Add turmaric and salt.
  7. Pour everything from the cooker into the pan.
  8. Add dumplings.  Bring to boil.
  9. Remove from heat. Garnish with coriander leaves and serve as a soup or as a side dish with rice.

Pork with mustard greens (Lai xaak)

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Ahom Bogori (Peach)

Ahom Bogori (Assamese আহোম বগৰী)  in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam. It is believed that the name ' Ahom bogori ' is derived from the Kingdom of Ahom . It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam. The Ahoms have established their dynasty and ruled the Ahom Kingdom, the present day Assam for about 600 years.  We call this fruit as ahom bogori from childhood....

Puroi Xaak Bhaji | Stir Fried Malabar Spinach

  Malabar spinach is known as puroi xaak in Assamese and pui shaak in Bengali. Malabar spinach is also known as basella alba, which is a vine with sort stems and thick heart shaped leaves. There are two varieties of malabar spinach - green and red. Malabar spinach is rich in vitamin A and C, iron and calcium.  The one that I am using in this recipe has green leaves with reddish purple stems. The stems of Malabar spinach is soft and hence are used as a vegetable together with its leaves. Modhuxulung (মধুশোলেং) Chutney

Polygonum microcephalum is a green leafy vegetable found in  Assam.  It is called  'modhuxulung ' in  Assamese  . It is sour in taste specially used in making sour lentil soups and sour fish curries. Kumol Saul Jolpan

Assam soft rice or Kumol saul is instant soft rice that requires no cooking. Kumol saul is a glutinous rice found in Assam which is pre cooked and sun dried. It is also known as magic rice as it can be prepared in minutes by just soaking in water. Kumol saul is mostly served with boiled milk or curd , banana and jaggery.
