Elephant Apple Chutney / Ou Tenga Chutney



Elephant Apple is known as Ou tenga in Assamese. It's scientific name is Dillenia Indica. Elephant apple is sour in taste and very native to Assamese cuisine . Elephant apple is generally used in Assamese cuisine to make fish curries. Pickle can be made from elephant apple.  It can also be consumed as raw by making a raw elephant apple chutney. Some people dry it's petals and then grind it and preserve it in bottles and then use it in making recipes like pork with dry grounded ou tenga.

I'm sharing a recipe of  elephant apple chutney which can be served with rice or roti as a side dish.  This chutney can also be served with fritters.

ELEPHANT APPLE CHUTNEY / OU TENGA CHUTNEY:

INGREDIENTS:
• 1 elephant apple
• 1/2 cup jaggery
• 1/2 cup suger
• 1/2 tbsp cumin seeds
• 1 tbsp red chilli powder
• 1 bay leaf
• 2 dry red chilies
• 2 cups of water
• 1 tbsp vegetable oil

** dry fruits like raisins , cashew nuts, dates can also be added (optional)  . But I'm preparing it as plain.



METHOD:


1. Remove the petals of elephant apple. Clean the edible soft petals under running water.

2. In a pressure cooker take the elephant apple pieces . Add 2 cups of water. Close the lid. In high heat cook for  3-4 whistles.
Remove from heat .Let the cooker open itself .

3. In a pan, heat oil. Add dry chillies, bay leaf and cumin seeds. When crackling,  pour everything from the cooker .

4. Add sugar and jaggery. Cook until sugar and jaggery melts. Add red chilli powder.

5. Add raisins, cashew nuts and dates.(optional)

6. Stir consistently until great amount of water gradually evaporates and until the chutney  thickens.

7. Remove from heat. Let it cool.

Elephant apple chutney is ready to serve. You can store it in glass container in your refrigerator and use it for 3-4 days.

Green Tomato Pickle

Hey there!  here I'm back with another pickle recipe.  Sweet, sour and spicy green tomato pickle is very easy to prepare.

Kumro Patay Bora / Rongalau Pator Bor (Pumpkin Leaves Fritters)

Kumro patay bora is a Bengali style pumpkin leaves fritters stuffed with spicy potato stuffing and wrapped in tender pumpkin leaves. Dipped into batter and fried into crispy golden brown from outside and soft juicy inside.

It's raining today and I decided to make rongalau pator bor. So I asked my husband to pluck some tender pumpkin leaves from our kitchen garden. Immediately I  prepared the fritters together with a mixed vegetables sabji and served in dinner with rice.  And believe me the pumpkin leaves fritters were really yummy. Chicken 65 Gravy Recipe

Chicken 65 is one of the popular dishes of South Indian cuisine.  Chicken 65 is a spicy, deep fried tasty chicken delicacy, originated in Chennai, India. It was first introduced in 1965 by the Buhari Hotel Restaurant in Chennai.

Boneless pieces of chicken are marinated with different spices, flour and curry leaves and thereafter deep fried in oil. Chicken 65 can be served as dry or as gravy. For gravy, the flour coated chicken pieces are again sauteed into a spicy curd gravy.

Although the chicken 65 is  a boneless chicken dish, I also use pieces of chicken with bones because my kids like it that way.

The recipe is not that complicated and I have used simple home ingredients which I store in my kitchen. Serve chicken 65 as a starter or as a side dish.

How to make KHAR of Assamese Cuisine

Khar is an alkali prepared from sun dried skin of some varieties of banana. It is prepared by filtering the water from the burn ashes of the skin of the banana. Therefore it is also called kolkhar (kol means banana). It is preserved in bottles and can be used for months. It sounds bizarre but Assamese people are using khar as a cooking ingredient since time immemorial when salt was not discovered. It is believed that khar cleanses the stomach.

 A traditional Assamese meal begin with khar recipe.  A khar recipe can be prepared with raw papaya, bottle gourd, dry Jasmin flower,  doron bon xaak, fish head etc. In a khar recipe khar is the key ingredient.  One or two tablespoons is enough to prepare khar recipe.  Khar can also be consumed as raw by just adding chopped garlic,  few drops of mustard oil and salt.

Ahom Bogori (Peach)

Ahom Bogori (Assamese আহোম বগৰী) in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam.

It is believed that the name 'Ahom bogori' is derived from the Kingdom of Ahom. It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam. The Ahoms have established their dynasty and ruled the Ahom Kingdom, the present day Assam for about 600 years.

Fish, Fermented Bamboo Shoots and Okra Curry

Fish and fermented bamboo shoots curry is a very simple yet tasty fish curry recipe.
Bamboo shoots are part of traditional Assamese cuisine. In Assam young bamboo shoot sprouts are found during summer between the months of June and August. There are only two to three varieties of bamboo shoots available in the local market in my place. Last Saturday my husband bought a bamboo from the local market. I preserved some for fermentation. It requires only 3-4 days for fermentation. The taste of raw bamboo shoot is bitter. After fermentation the bamboo shoots become sour and can be used to prepare fish curry.

In this fish curry I have used fresh fermented bamboo shoots that I made last Saturday. I'm also using okra in this fish curry. The recipe is very easy. Serve with steamed rice.

Potato Croquette / Aloo Chop

Potato croquettes are fried potato rolls, coated in breadcrumbs, crispy from outside and soft from inside.  In Indian potato croquettes are called aloo chop or potato chop. 

These potato croquettes are actually very easy to make.  You can use your leftover boil potatoes to make it.  You can also add meat, vegetables, cheese or anything of your choice.  The only rule to make these croquettes are that you have to roll croquettes over breadcrumbs and fry in oil.

Wash mango and peel. Make small cubes.Now in a blender jar take mango cubes, hung yogurt, sugar and cardamon powder. Blend again into a smooth puree. Transfer the liquid into a airtight container Close the lid and place in the freezer for 6 hours.After 6 hour take out the container from the freezer and garnish with chopped cherries. Enjoy!
