Spicy baby potatoes recipe

Who doesn't like potatoes.  This spicy baby potatoes recipe is a very simple but tasty vegeterian recipe which I like to serve with dry roti ( Indian bread).  Try this tasty recipe this weekend. You can also serve this recipe as a side dish with steamed rice.

INGREDIENTS:

  • 16 baby potatoes
  • 3/4 cup of chopped coriander leaves
  • 1 onion chopped
  • 1 tomato chopped
  • 2 green chillies chopped
  • 1/2 cup cream
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1/3 tsp cumin seeds
  • 1/3 tsp ajwain
  • 3 tbsp oil
  • Salt to taste



METHOD:

  1. Boil potatoes.  Peel off the skin. Rub with salt and turmeric.  In a pan heat oil.  Fry potatoes till light brown. Drain and keep aside. Do not throw the remaining oil.
  2. Make a fine paste of the chopped onions, tomatoes, green chillies  and coriander leaves in a blender.
  3. Heat remaining oil. Add cumin seeds and ajwain seeds. When crackling  add the  paste from the blender  and saute till  oil separates.
  4. Now add cumin powder, coriander powder, red chilli powder and salt. Stir and fry.
  5. Add fried baby potatoes  and saute over high heat till glossy.
  6. Add 1/2 cups of water and bring to boil. Simmer for 10-15 minutes.  Add garam masala and cook for another 5 minutes.
  7. Add cream. Mix well.
  8. Remove from heat. Serve with roti.
