Chicken Noodle and Dumpling Soup

Chicken noodle dumpling soup is a comfort food. Serve it in lunch or dinner. I use maggi noodle which is a very popular noodle brand in India. And the dumplings that I made is actually called momos. So you can say it's a chicken maggi momo soup also.

This chicken noodle and dumpling soup is my kids  favorite. As they don't like much veggies, I made it simple by adding only chicken pieces. But if you like, you can add carrot, spinach, broccoli etc. You can serve it in lunch or dinner. But as we Indians like to have rice or roti in lunch or dinner,  I serve this chicken noodle and dumpling soup in breakfast.

I use maggi noodle which is a very popular noodle brand in India. And the dumplings that I made are actually called momos. So you can say it's a chicken maggi momo soup also.

I generally use wheat flour instead of all purpose flour because wheat flour is more healthy than all purpose flour. But you can use any flour of your choice.

INGREDIENTS:

For Dumplings and Stuffing:
  • 2 cups all purpose flour (maida)
  • 1 tbsp refined vegetable oil
  • 1/2 cup hot water or as required 
  • Pinch of salt 
For stuffing:
  • 100 gms boiled chicken 
  • 1 tbsp minced garlic 
  • 1/2 tbsp minced ginger 
  • 1 finely chopped onion 
  • 1/2 tsp black peeper 
  • Salt to taste 
For Noodle:
  • 1 packet any noodle (Here I'm using Maggi noodle)
For Children Soup:
  • 250 gms of chicken breast (cut into pieces) 
  • 2-3 cups of water 
  • 2 tbsp of butter 
  • 1 tbsp of all purpose flour (maida) 
  • 1/2 tsp of black pepper 
  • Salt to taste 
For Garnishing:
  • 2 tbsp of finely chopped coriander leaves 

METHOD:
  1. In a pan or pressure cooker boil chicken pieces for 2-3 whistles adding salt.  Keep aside. 
  2. Cook noodles following packet instructions. Keep aside. 
For Dumplings 

First make the Stuffing 
  1. Shred the boiled chicken into fine pieces. Add finely chopped onion, minced garlic and ginger. Add salt and pepper. Mix everything well. Keep aside.  ]

  1. In a large mixing bowl take all purpose flour.
  2. Add salt and refined vegetable oil. 
  3. Add hot water and mix everything well. Knead the mixture into a smooth dough. 
  4. Roll out some small balls and using a rolling pin flatten the balls into round shape. 
  5. Add the chicken stuffing mixture in the center and make dumplings of any shape you like. In the above picture I made rose shaped dumplings. 
  6.  For rose shaped dumplings, place three round shaped flatten pieces overlapping one another. Add chicken stuffing in the center and close every pieces. Start rolling from one piece to another till the end to form a rose shape.
For Soup 
  1. In a pan heat 2 tbsp of butter. Add 1 tbsp of all purpose flour. Mix and stir for a minute. 
  2. Pour everything from the cooker. Bring to boil. 
  3. Add black pepper. 
  4. Reduce heat to simmer and add dumplings and cook for 4-5 minutes until dumplings float to the surface. 
  5. Add cooked noodles. 
  6. Garnish with chopped coriander leaves. 
  7. Serve hot.

Iron-Rich fish curry with spinach

Every second woman in India is anemic.  Anemia is a disease  caused due to lack of iron in diet.  So we should  include iron-riched food in our everyday diet.

The symptoms of iron deficiency  are of ofen feeling  tired,  pale skin,  hair fall, easily breakable  nails etc.  Anemia or iron deficiency  reduces working  capacity of an women. So we should always include iron riched food  for  a balance  diet.

Here I am sharing two fish curries with spinach.  The procedure of making these fish curries are almost same.  In one fish curry I am using modhuxuleng and in the other tomato.

How to make KHAR of Assamese Cuisine

Khar is an alkali prepared from sun dried skin of some varieties of banana. It is prepared by filtering the water from the burn ashes of the skin of the banana. Therefore it is also called kolkhar (kol means banana). It is preserved in bottles and can be used for months. It sounds bizarre but Assamese people are using khar as a cooking ingredient since time immemorial when salt was not discovered. It is believed that khar cleanses the stomach.

Baked Pabo Catfish With Lemon Garlic & Potatoes

Pabo catfish is a fresh water fish found in lakes and rivers. Pabo catfish taste best when cooked with mustard seeds paste. In this recipe I tried to bake pabo catfish. Here in this recipe I used simple ingredients available in every Indian kitchen like turmeric and mustard oil. 10-12 jackfruit pods 1 cup heavy cream   1/2 cup sugar 2 tbsp chocolate chips (optional) 
METHOD:

In a bowl take out the white fiber from the jackfruit pods. Discard the seeds. Now in a blender jar take the jackfruit fiber and sugar. Blend into a smooth puree.  Whisk the cream till thick. Add jackfruit puree in the cream and mix well. Add chocolate chips. Keep it in the refrigerator and freeze overnight. Scoop and serve.Enjoy!
