Paneer Tikka (Grilled Cottage Cheese)

Grilled Cottage Cheese

Paneer Tikka is an Indian dish made from cottage cheese cubes marinated in different Indian spices and grilled in a tandoor, microwave or tawa. We can also add pieces of onion, capsicum and tomato in this recipe. You can serve paneer tikka as a starter.

This is probably my last blog post of 2019. Only couple of hours left for 2020 while I'm typing this recipe. The whole day I was very busy. From evening onwards I prepared many dishes as a part of year ending celebration. I made only vegetarian food today. Today is tuesday and in India  tuesday is considered as a holy day and therefor many Indians eat vegetarian food on tuesdays. We too eat vegetarian food on tuesdays but we have a different reason for it.  As my father-in-law died on tuesday,  we don't eat non-vegetarian food on tuesdays.

As a part of year ending celebration, I prepared panipuri in the evening followed by mixed chat.

Then I prepared paneer tikka for starter for the dinner.  For the main course I cooked tawa roti, palak paneer and potato curry.

For making paneer tikka recipe you need to marinate the cottage cheese cubes together with the other vegetables in yogurt and spices. I have not used onion in this recipe.  But if you like, you can add onion also. Here is the recipe in details. But before that you can check my last year's recipe smoked pork sticks.

INGREDIENTS:

  • 200 gms cottage cheese or paneer cut into cube sized pieces. 
  • 1 large onion cut into large pieces.
  • 1 large tomato cut into large cube sized pieces.
  • 1 capsicum cut into cube sized pieces. 
  • 1/2 cup yogurt 
  • 1/2 tsp cumin powder 
  • 1/2 tsp coriander powder 
  • 1/2 tsp red chilli powder 
  • 1/2 tsp chat masala 
  • Salt to taste as required 
  • 1 tbsp cooking oil 
METHOD:
  1. In a bowl stir together yogurt, cumin powder, coriander powder, red chilli powder, chat masala and salt. 
  2. Now in this yogurt mix add cottage cheese, onion, capsicum and tomato pieces. Mix well. 
  3. Now cover the bowl and keep it in the refrigerator for half an hour. 
  4. Now take the skewers and push the skewers through the cottage cheese and other marinated vegetables  (at least 3-4 pieces in every skewer).
  5. If you are making this recipe on oven, preheat the oven. I made this recipe on tawa. You can use a non stick pan or an iron pan for this purpose. 
  6. Now heat the tawa.  Place the skewers on the tawa.
  7. Spray oil to avoid the cottage cheese and other vegetables from drying. 
  8. Turn the skewers from time to time. Remove from heat once they become golden.
  9. Serve hot.

Pork with mustard greens (Lai xaak)

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Ahom Bogori (Peach)

Ahom Bogori (Assamese আহোম বগৰী)  in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam. It is believed that the name ' Ahom bogori ' is derived from the Kingdom of Ahom . It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam.
