Stir Fried Egg and Crown Daisy (Babori Koni) Recipe

Hello!  I'm back again after enjoying Bhogali Bihu festival.

Today I am going to share a simple stir fried egg and crown daisy recipe.  We call this recipe Babori Koni in Assamese.  Babori Xaak (বাবৰি শাক ) in English is know as garland chrysanthemum,  crown daisy,  chrysanthemum greens, edible chrysanthemum,  chop suey green,  Japanese green etc.

Babori Koni 
Crown Daisy is a leafy aromatic herb with yellow flowers that blooms during winter and it is edible chrysanthemum. The plant's greens are used as leafy vegetable in many Asian cuisines.  In Assamese it is called babori xaak. These leaves are very soft and tender and therefore need less time for cooking. It's young  and fresh greens can be used raw in salads.  I love this green but its not widely available. I got some crown daisy from my sister in law's kitchen garden and decided to make this simple recipe.  It's very tasty and I also like the sweet aroma of this recipe.

Stir Fried Egg and Crown Daisy (Babori Koni) Recipe

INGREDIENTS:

  • 1 bunch crown daisy,  finely chopped 
  • 2 eggs,  beaten 
  • 1 onion finely chopped 
  • 2 green chillies finely chopped 
  •  pinch of turmeric 
  •  2 tbsp mustard oil 
  • salt to taste 

METHOD:


  1. Heat oil in a pan.  Add chopped onions.  Fry till translucent .
  2. Add turmeric powder.  
  3. Now add chopped crown daisy and chopped green chillies.  
  4. Add salt. Mix well. Stir fry for 2-3 minutes.
  5. Add beaten eggs. Mix well to combine them together. Stir again for 2-3 minutes.
  6. Remove from heat.  Serve hot with steamed rice as a side dish.

Pork with mustard greens (Lai xaak)

Mustard green is a green leafy vegetable. I love its taste.  Its little bitter but it taste good once cooked.  Many recipes can be made with this beautiful green leafy vegetable. Fish with mustard greens , mustard greens stir fry, mustard green raw chutney,  boiled mustard greens are some of the mustard greens recipes.    Pork with mustard greens is a very special recipe of  Assam . Use full grown mature and soft mustard green leaves only. This recipe is very simple and very less spices are used. Assamese cuisine  is in fact less spicy compared to other Indian cuisines.  Pork with mustard greens is served as a side dish with rice. Assam is a rice eating state and Assamese generally eat rice at lunch and dinner.  So this pork  recipe can be served at lunch and dinner with steamed rice. Assamese Anguli Pitha Recipe

Anguli pitha is a finger shaped recipe made from rice flour.  The Assamese word 'anguli' means fingers and 'pitha' is a type of rice cake. It's an Assamese style recipe that can be served as breakfast(jolpan) or as a snack with the evening cup of tea. Whenever I visit any ethnic food festival in Assam, the food that mostly attracts me are the smoked pork sticks and local liquor. The smoked pork sticks looks so tempting that every visitors stopped at least once near the fireplace to have a glance of it. Assamese Doi Chira Jolpan Recipe

Assamese Jolpan recipes are generally breakfast recipes which requires no cooking and can be prepared in no time.  These jolpan recipes are not only served as breakfast but can also be served to guests specially in the time of Bihu festivities. Assamese Til aru Bora Saulor Tel Pitha (Sticky Rice and Black Sesame Seeds Fritters)

Tel pitha  also known as Ghila pitha  are made during Bihu festivals of Assam.  Here "tel" means oil and "pitha" means dumplings or fritters made from rice(bora saul).   So "tel pitha" means rice fritters made in oil.
