Boiled banana flower with vegetables


Banana flower or Koldil in Assamese is used as a vegetable which is very rich in iron, fiber, antioxidant and many other vitamins and minerals. We can cook banana flower like any other vegetable but today I'm going to share boiled banana flower recipe with zero oil. We can serve this banana flower recipe with rice in lunch or dinner.

Before the recipe, here are some of the benefits of eating banana flower :
  1. As banana flower is rich in iron, consuming banana flower can help in increasing level of hemoglobin and the production of red blood cells.
  2. As banana flower contains fiber, it can help in digestion.
  3. As a good source of potassium, it can help to protect the heart.
  4. Vitamin A and C in banana flower helps support the immune system.
  5. As it is low in calories, its good for weight lose.

INGREDIENTS:

  • 1 banana flower 
  • 1 potato chopped into cubes 
  • 1 taro root chopped into cubes 
  • 1 carrot chopped into cubes 
  • 1/2 tbsp ginger-garlic paste
  • 1 onion, chopped
  • Chopped green chillies (3-4)
  • 1/2 tsp of black pepper 
  • 1/2 cup chopped coriander leaves 
  • Salt to taste

METHOD:

  1. Remove the outer petels of banana flower, collect the florets in each layer and keep aside. Keep doing in unless you find th soft and white part of the flower. Keep the white part aside.
  2. From the florets discard the stick like part which is in the middle.
  3. Now chop the white part of the banana flower together with the florets and then soak them in water for few minutes.
  4. Drain the water from chopped banana flower.
  5. Place the wok or pan in gas stove. Add chopped banana flower, potato, taro root and carrot. You can also add any other vegetable of your choice.
  6. Add ginger garlic paste and chopped onion. Add chopped chillies. 
  7. Add 1 cup of water and cook for 15 minutes in low heat by covering the lid.
  8. Add chopped coriander leaves, black pepper and salt. Mix well. Cover the lid and in low heat cook for 10 minutes or until tender.
  9. Remove from heat.  Serve hot.
* You can use pressure cooker instead of a pan.

Ahom Bogori (Peach)

Ahom Bogori (Assamese আহোম বগৰী)  in English is called Peach. It's scientific name is Prunus persica. Peaches resembles and closely related to apricots and plums. Peaches are soft when ripened and are very delicious. Unlike apricot and plum, peaches have one large middle seed.  As I googled I found that peach fruit was domesticated and cultivated for the first time in Northwest China. It's a summer fruit and largely available in Assam. It is believed that the name ' Ahom bogori ' is derived from the Kingdom of Ahom . It may be because the Ahoms have brought with them the seeds of peach.  Ahom is a large community originally from the Chinese province of Yunnan, which is located on Southwest China. From Yunnan, they migrated into Myanmar and then after crossing the Patkai Mountains entered Assam. The Ahoms have established their dynasty and ruled the Ahom Kingdom, the present day Assam for about 600 years.  We call this fruit as ahom bogori from childhood....

Amroli poruar tup or the red ant eggs  are consumed by the people of Assam as a part of their traditional cuisine at the occasion of Rongali bihu, celebrated in the month of April.
