Soya chunks Bunny Chow

Bunny Chow 

Bunny Chow is a South African fast food originated in the Durban Indian community. I was introduced to this mouthwatering fast food few years back while watching a cooking show on television.  I was not blogging at that time.  According to that show the history behind this name bunny chow come from Bania's Chow. Bania refers to an Indian community of merchants and traders who lived in Durban in 1940s


Bunny Chow consists of Western bread with Indian curry. The bania community who goes out for work did not get much time to make Indian bread (roti)  and so they used western bread. Since it was difficult to carry the curries in separate containers,  they cut the bread in half.  hollowed the bread and then filled with their favorite Indian curry,  toped with the soft part of the bread which was taken out from the bread by hollowing, wrapped it with papers and went to work. While I found many other stories behind this name bunny chow when I goggled. But the agony is that this Indian dish is neither popular nor available in  India and now a popular fast food dish in South Africa .

So I made Bunny Chow yesterday.  I used buns instead of bread . Here I am using soya chunks and potatoes curry and it turned out really very very tasty.

INGREDIENTS:

  • 2 buns

FOR CURRY:

  • 1/2 cup soya chunks
  •  1 potato boiled
  • 1/2 tsp turmeric powder
  •  1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tbsp red chilli powder
  • 1/2 tsp garam masala
  •  1/2 tsp ginger garlic paste
  •  1 small onion finely chopped
  • 1 small tomato finely chopped
  • 2 tbsp oil (extra oil required for frying soya chunks)
  • salt to taste




METHOD:

  1. Cut the upper part of the buns.  Hollow the bigger parts. Don't throw the soft inner parts . You can add it to the curry.
  2. Peel potato. Cut into cube sized pieces.
  3. Soak soya chunks in warm water for 10 minutes. Squeeze it and wash them in cold water.
  4. In a pan heat oil and fry soya chunks till light golden brown. Drain keep aside. Don't throw the remaining oil.
  5.  If required add more oil otherwise heat the remaining oil. Add chopped onions and ginger garlic paste. Fry till translucent. Add chopped tomatoes. Fry till oil separates. Add turmeric powder, cumin powder, coriander powder and red chilli powder.
  6. Add potatoes and soya chunks. Mix well.  Add 1/2 cup of water.
  7. Bring to boil. Add salt.
  8. Now reduce the heat and simmer.
  9. Add garam masala powder and continue to simmer stirring constantly for some time.
  10. Remove from heat.
  11. To serve spoons the curry into the hollows of the buns . Garnish with curry leaves.

Assamese Anguli Pitha Recipe

Anguli pitha is a finger shaped recipe made from rice flour.  The Assamese word 'anguli' means fingers and 'pitha' is a type of rice cake. It's an Assamese style recipe that can be served as breakfast(jolpan) or as a snack with the evening cup of tea.

The recipe anguli pitha requires little time to prepare.  As today is Sunday, a holiday, I decided to prepare this recipe for breakfast. It's a very simple and less spicy recipe. This recipe that I am going to share is a salty one but there is one sweeter version of this anguli pitha recipe, which I will share some other day. The type of rice that I am using is called 'lahi chawl' in Assamese which I received from my maternal uncle who is a farmer and he grows rice on his own paddy field. You can use any other type of rice also.  You can also use ready-made rice flour available in the market.  But I preferred to make it myself and therefore I soaked 1 cup of rice on Saturday night to prepare anguli pitha.

Kathalu diya Matidail | Assamese style Split black gram curry with yam (Dioscorea bulbifera)

Mati mahor dail (মাটি দাইল), urad dal or black gram has a special place in Assamese cuisine. Mati dail is ofen served in hokam or religious functions at home. Assamese style split black gram can be prepared in many different ways.  Sometimes by adding khar and sometimes by adding elephant apple etc. Today I'm going to share a simple Assamese style mati dail recipe where I have added yam or Kathalu.

Yam is a common name for some edible tuber plants whose genus is dioscorea. Kathalu is a type of yam whose biological name is "dioscorea bulbifera". These edible tubers are generally available during winter in Assam.

This split black gram curry is served in main course as a side dish with rice.

Semolina and Coconut Ladoo | Suji and Coconut Ladoo

This coconut suji ladoo or semolina and coconut ladoo is a very delicious Indian sweet dish. This suji ladoo is generally made during festivals like Diwali. It's very easy to prepare but the procedure is little longer. You need to roast semolina first in order to remove it's raw taste. Use fresh grated coconut if possible.  The sugar must be very finely ground. You can make superfine sugar at home by using the food processor. Serve these ladoos as a dessert or with an evening cup of tea.

The false roselle or Hibiscus acetosella is a similar plant like roselle. The difference is that the leaves of false roselle are red in colour and roselle leaves are green in colour. Cheese Corn Toast Recipe

Cheese Corn Toast is a simple breakfast recipe that can be prepared within just 5 minutes. This cheese corn toast is my daughter's favorite.  I made this last Saturday.  If you are a follower of me on Instagram , I'm sure you have seen this pic.  With the similar idea I made Roti Pizza (Indian flat bread pizza) last Sunday.

Potato Croquette / Aloo Chop

Potato croquettes are fried potato rolls, coated in breadcrumbs, crispy from outside and soft from inside.  In Indian potato croquettes are called aloo chop or potato chop. 

These potato croquettes are actually very easy to make.  You can use your leftover boil potatoes to make it.  You can also add meat, vegetables, cheese or anything of your choice.  The only rule to make these croquettes are that you have to roll croquettes over breadcrumbs and fry in oil.
