Okra/ ladies' fingers is a green flowering plant with lots of health benefits. Okra has long been favored as a food for the health conscious. It contains potassium, vitamins, folic acid and calcium. It's low in calories and has a high dietary fiber content and therefore good in lowering blood sugar.

Soya chunks is known for its high protein content. Soya chunks reduces risk of osteoporosis in menopausal women. Soya chunks also good for reducing cholesterol levels.
Chayote squash, Soya chunks and Okra sabji:
• 1/2 cup soya chunks
• 1 medium sized chayote squash
• 1 small potatoe(optional)
• 6 okra
• 1/2 tbsp turmeric powder
• 1/2 tbsp cumin powder
• 1/2 tbsp coriander powder
• 1/2 tbsp black pepper
• 1/2 tbsp garam masala
• 1/2 tbsp ginger garlic paste
• 1 small onion finely chopped
• 2 tbsp oil (extra oil required for frying soya chunks)
• salt to taste
Peel skin of chayote squash and potato. Cut into cube sized pieces.
In a pressure cooker take the chayote squash and potato pieces. Add 2 cups of water. Close the lid and on high heat cook for 2 whistles.
Soak soya chunks in warm water for 10 minutes. Squeeze it and wash them in cold water.
In a pan heat oil and fry soya chunks till light golden brown. Drain keep aside. Don't throw the remaining oil.
If required add more oil otherwise heat the remaining oil. Add chopped onions and ginger garlic paste. Fry till translucent. Add turmeric powder, cumin powder and coriander powder.
Now pour chayote squash and potato pieces from the cooker. Don't throw the water. Fry for 2-3 minutes.
Add soya chunks. Mix well. Add the remaining water from the cooker.
Wash okra under running water and cut both the ends. Add okra into the pan.
Bring to boil. Add black pepper and garam masala powder.
Cook till okra become soft and tender. Remove from heat.
Serve hot with rice.
