Bottle gourd sabji with duck egg


Bottle gourd has always been regarded as one of the most healthiest vegetables. Bottle gourd plant is a vine and bottle gourd looks like a bottle shaped and green in colour. Bottle gourd is called as lauki in Hindi and lau in Assamese. Bottle gourd has many health benefits as bottle gourd is rich in dietary fiber. As bottle gourd contains almost  92% water so it is good for juice extraction. Many different recipes can be made from bottle gourd. This is my second post on bottle gourd recipe . Here in this recipe I'm using Duck eggs. Duck eggs' shell are thicker than chicken eggs. Therefore duck eggs stay fresher for longer periods.

Bottle gourd with Duck eggs :

INGREDIENTS:


• 1 cup chopped bottle gourd

• 1 potato cut in cube sized (optional)

• 1/2 tbsp ginger garlic paste

• 1/2 tbsp  Panch phoron( a mixture of 5 different spices: cumin seeds, black mustard seeds, fenugreek seeds, fennel seeds and nigella seeds)

• 1/2 tbsp turmeric powder

• 1/2 tbsp cumin powder

• 1/2 tbsp coriander powder

• 1/2 tbsp red chilli powder

• 3 tbsp oil

• 1 duck egg
&
• Salt to taste

For garnishing:- chopped culantro (long coriander/ maan dhania)


METHOD:

Heat oil in a pan. Add panch phoron. When crackling add ginger garlic paste. Cook till translucent. Add turmeric powder.

Now add chopped bottle gourd. Stir and fry. Cook till water absorbs.  Add cumin powder, coriander powder, red chilli powder and salt. Cover the pan and cook till bottle gourd becomes soft and tender.  Add water if required.

Beat duck egg in a bowl. Pour it over the bottle gourd in the pan. Mix well and cook for 2-3 minutes in high heat.

Remove from heat. Add chopped cilantro.

Serve hot with rice as a side dish.

1 cups of raw mango peeled, seeded and diced. 5-6 finely chopped mint leavesPinch of cumin powder 1/2 tsp black salt 4 tbsp sugar 2 cups of water METHOD: In a blender blend all the ingredients until smooth. With the help of a stained, filter the liquid into a jar. Discard the remaining. Transfer the liquid into ice lolly  molds.Freeze until solid.

Instant Green Chilli Pickle in Mustard Recipe

Hey!  I'm back again with another Green chilli pickle. Hope you are not bored with my continuous pickle recipes. Summer is meant for pickling and I have still many pickles to made in my mind. Hope you liked my previous green chilli pickle recipe. Today I'm going to share an instant green chilli pickle recipe which you can serve to your guests instantly after making. This green chilli pickle is very easy to prepare. The taste of this pickle is hot and sour.  This is similar to the chilli chutney that is usually served in marriage parties. I'm using medium hot Indian variety of  green chillies for making this Instant pickle. Green chillies are dipped into the mustard seeds' paste and the use of vinegar makes the pickle sour to taste. You can serve this pickle with rice or roti (Indian bread)  as a side dish,  but I like to have this pickle with fritters (pakoras) too.

Easy Fish Curry Recipe

This recipe is for my those blog followers (specially from US)  who has a temptation for Indian fish curry. This recipe need not much afford and can easily prepare with simple ingredients. Indian recipes needs much afford as it requires different spices to prepare and US people hardly store so many Indian spices in their kitchen. This recipe may also useful for beginners and bachelors.  And off course this recipe is for busy and lazy people like me too.

In this recipe I'm using tomato based pizza or pasta sauce together with mustard seeds' paste.  You can use any ready made pizza sauce and mustard paste or if you like you can make it yourself. Here I'm using ready-made pizza sauce but I made mustard seeds' paste myself . For mustard seeds' paste I'm using yellow mustard seeds. Yellow mustard seeds are less bitter than black mustard seeds. Bottle Gourd ( Lauki) Kofta Curry Recipe

Bottle gourd is also known as lauki in Hindi and lau in Assamese, is a versatile vegetable that contains almost 96% of water. Bottle gourd is perfect for juice extraction but it is used in making many different recipes in Indian cuisine. Bottle gourd pakoras, kofta curry, sabji, halwa, thepla are some of the famous bottle gourd recipes of Indian cuisine. Bottle gourd kofta curry or Lauki kofta curry is a light tomato based spicy curry dunked with koftas made from bottle gourd.

Now what is kofta ?

 Well a Kofta is a savory ball made from minced meat or vegetables.

Bottle gourd is one of my personal favorite vegetable and I often make simple bottle gourd sabji or sometimes fish curry with bottle gourd. I become lazy these days in doing experiments in my kitchen because of taking care of my two little kids.
