Palak paneer (cottage cheese with spinach)

This is my third recipe on paneer  or cottage cheese.        Paneer  or Cottage Cheese is also known as Indian Cheese. It is an important part of Indian cuisines. It is generally made by curding heated milk with lemon juice or vinegar.       Paneer consist of 4 percent fat and 11 percent protein. So it is a high source of protein. There are many health benefits of paneer. Paneer is very good in taste and there are many varieties of dishes of paneer such as sahi paneer, paneer butter masala, paneer tikka masala , dhania paneer, matar paneer etc. etc.         Palak paneer   or cottage cheese with spinach  is a simple dish of Indian cuisine. It's very easy to prepare and very yummy too. Serve palak paneer with roti (Indian bread). I am using here very less amount of spices and cooked it in a very home style manner. Assamese hukoti mass (dry fish) recipe with grilled eggplant

Hukoti means ground dry fish . Dry fish before grounding dried on smoke over the top of open fire cooking stove by the village people. In this recipe I have used grilled eggplant.  This recipe is similar to Punjabi baingan ka bharta.  But I am adding an Assamese twist here by adding ground dry fish (hukoti) . INGREDIENTS : 1 eggplant  1 onion (chopped) 1 tomato (chopped)  2-3 tbsp ground dry fishes(hukoti)  2-3 green chillies (chopped) 1/3 tsp turmeric powder 1/3 tsp cumin powder 1/3 tsp coriander powder 1/3 tsp red chilli powder 1/2 cup chopped coriander leaves 2 tbsp oil  salt to taste METHOD : On a gas cook top roast the eggplant  straight on the burner. Keep turning the eggplant  till all the skin on the eggplant is charred and the inner flesh looks really soft. Let the eggplant become cool itself. How to cook Sticky Rice in a pressure cooker (without soaking for hours)

sticky rice  cooked sticky rice  Sticky rice  or bora saul is a part of  Assamese cuisine .  Sticky rice is basically used in making different snacks (pithas)  during Bihu festivities. I like to eat sticky rice in breakfast.  Sticky rice is served with milk, cream, yogurt and jaggery. But I like to eat sticky rice with vegetables (Sabji). Cooking sticky rice is very easy.  I used to cook sticky rice in pressure cooker.  No need to soak for hours. Here is the step by step procedure of making sticky rice. INGREDIENTS :  2 cups of sticky rice  2 cups of water  1 tbsp cooking oil METHOD: Step1 : Take two cups of sticky rice in a large bowl. Step 2 : Rinse sticky rice under running water. Step  3 : In a pressure cooker pan  pour the sticky rice.  Add 2 cups of water. Step 4 : Add 1 tbsp cooking oil. Step 5 : Close the lid of the cooker. In law heat cook for 1 whistle. Fish pulao  is a tasty Indian  recipe which I cooked last sunday.  So today I'm sharing this delicious recipe with you. Serve this recipe in lunch or dinner with raita, pickle or veg salad. INGREDIENTS: For rice • 1 cup basmati rice •  onion finely chopped • 15-20 cashew nuts • 2 green cardamom • 1 inch cinnamon stick • 3 cloves • 4-5 tbsp cooking oil  • 2 tbsp ghee ( clarified butter ) • Salt -1/3 tbs • Sugar - 2 tbsp For fish • 250 gms fish(any) cut into medium cube sized pieces •1/2 tbsp turmeric Powder • 1/2 tbsp ginger garlic paste • 1 onion chopped • 1 tomato chopped • 2 tbsp cream • 1/3 tbsp cumin powder • 1/3 tbsp coriander powder • 1/3 tbsp red chili powder • 2 to 3 tbsp oil & • salt to taste METHOD: 1. So you can make this delicious  bread  pulao  in just a few minutes from those leftover breads.  You can also use leftover cooked veg sabji or leftover cooked meat pieces in this recipe. Dry fish with colocasia leaves

Colocasia is a tropical plant found in entire northeast India.  Its every part is edible.  Its leaves, stems and roots.  But Some may not like it. And some may be allergic to it. There are many varieties of colocasia found in this region. In this recipe  I am using small colocasia  plant's leaves with stems. There are many varieties of dry  fish  available in the market. Here  in this recipe I am using small dry fish which are dried on smoke over the open fire cooking stove by the village people. INGREDIENTS: A bunch of colocasia leaves with stems 2 tbsp lentil 10-15 dry fish 1/2 tbsp ginger garlic paste 1 small onion finely chopped 1/2 tbsp turmeric powder 1/2 tbsp black pepper 2 tbsp oil  salt to taste METHOD: Soak dry fishes in warm water for 5 minutes.
