Mixed leafy vegetables xaak


There are many green leafy vegetables found in Assam. We should eat as many as leafy vegetables as they are good for health. Green leafy vegetables are great source of antioxidants and vitamins. Below are some green leafy vegetables found in Assam with their English name:

Paleng - Spinach
Kolmou - Water spinach
Horiyoh xaak - Mustard plant
Lai xaak - Muatard green
Moricha - Amaranth
Khutura - Green amaranth
Jilmil - White goosefoot
Maati kaduri - Sessile joyweed
Bhedai lota - Skunk vine
Mosondori - Heart leaves...... etc.

The recipe of mixed leafy vegetables xaak


Ingredients:-

•• 1/2 cup each chopped leafy vegetables of:

        1. Mustard green

        2. Red amaranth

        3. Green amaranth &

        4. White goosefoot

● 1/4 tbsp fenugreek seeds

● 2 tbsp mustard oil

● 2green chillies chopped
&
● salt to taste

Method:-

  1. Heat oil in a pan. Add fenugreek seeds. When crackling,  add chopped leafy vegetables.  Add chopped green chillies and salt. Mix and fry.
  2. In a medium heat cook  untill leafy vegetables become soft. Leafy vegetables require less time for cooking. Cover the pan while cooking.
  3. Remove from heat and serve hot with rice as a side dish.
