Starfruit Chutney (Kordoi Chutney)

   Starfruit is also known as Carambola. It is yellow in colour and have five angle in shape. Starfruit is sweet as well as sour in taste and is very rich in vitamin C. The starfruit tree is a small bushy tree. We too have a starfruit tree at our home. In Assamese we called it 'Kordoi'.
 
    Many recipies can be made using starfruit,  but my favourite one is smoked or grilled 'goroi' fish mashed or pitika with grilled starfruit. I can eat raw starfruit also. I like it very much. Starfruit chutney is sweet and sour in taste. It can be served with roti, paratha or naan as a side dish.

INGREDIENTS:

  • 5-6 mature starfruit
  • 2 cups of sugar 
  • 2 tbsp cooking oil 
  • 3-4 dry red whole chillies 
  • 1 bay leaf 
  • 1/2 tsp nigella seeds 
  • 1 tsp vinegar
  • 1/2 cups of raisins 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp cumin powder 
  • 1/2 tsp coriander powder 
  • 1/2 tsp red chilli powder 
  • Pinch of salt 

METHOD:

  1. Cut the starfruits in any shape. Remove the seeds.
  2. In a pressure cooker take two cups of water.  Add starfruit pieces. Close cooker and cook for 5 minutes in high heat. (you can make it without boiling star fruits in pressure cooker by frying them directly in oil as raw but it'll require more time to cook.)
  3. Remove cooker from heat. Allow to cool.
  4. Open cooker . Drain and take the starfruit boiled pieces in a bowl. 
  5. In a pan, heat oil on medium heat. Add bay leaf, dry red chillies and nigella seeds. When crackling,  add turmeric powder, cumin powder,  coriander powder and red chilli powder. Mix well and pour boiled starfruits.
  6. Add salt and  sugar and cook for 15 minutes on medium heat.
  7. Add raisins and vinegar. Cook till oil separates , stirring constantly.
  8. Now the Starfruit chutney or kordoi chutney is ready to serve.
