Bhat aru Masor Petu Bhoja / Fried Rice with Fish Intestine

Bhat aru Masor Petu Bhoja  or Fried Rice with Fish Intestine is one of the signature recipe of Assamese cuisine. Generally leftover cooked rice is used to make this recipe. This recipe is very simple and served in the main course as a side dish with rice

INGREDIENTS:


100 gm fish intestine of any fish, big or small1/2 cup cooked rice 2 green chillies1 onion, chopped1/2 tbsp turmeric powder2-3 tbsp mustard oilSalt to taste.
METHOD:

Clean and wash the fish intestines under running water.  Cut the chillies lengthwise and make half of them. Heat oil in a pan. Add onions and turmeric.  Add fish intestines and cook for 2-3 minutes till the oil separates.  Now add cooked rice,  green chillies and salt. Cook til oil separates. Remove from heat. Serve hot with rice.

Eating fish intestine may sound bizarre but we Assamese people love to eat fish intestines. Lai xaak aru masor petu bhoja or fish intestine with mustard greens is a simple Assamese style fish intestine recipe. It is served in the main course with rice as a side dish.

Lofa xaak which is called Chinese mellow in English is one of the most healthiest leafy vegetable available during winter. Assamese styleFish lofa xaak and bogori curry is a very tasty fish curry recipe of Assamese cuisine. Bogori (Zizyphus jujuba), yet another winter special fruit of Assam. If you don't have jujube, you can use any other souring agent . Serve this fish curry at lunch or dinner with hot steamed rice.

Kathalu diya Matidail | Assamese style Split black gram curry with yam (Dioscorea bulbifera)

Mati mahor dail (মাটি দাইল), urad dal or black gram has a special place in Assamese cuisine. Mati dail is ofen served in hokam or religious functions at home. Assamese style split black gram can be prepared in many different ways.  Sometimes by adding khar and sometimes by adding elephant apple etc. Today I'm going to share a simple Assamese style mati dail recipe where I have added yam or Kathalu.

Yam is a common name for some edible tuber plants whose genus is dioscorea. Kathalu is a type of yam whose biological name is "dioscorea bulbifera". These edible tubers are generally available during winter in Assam.

This split black gram curry is served in main course as a side dish with rice.

Assamese Bogori diya Masoor Dail / Red Lentil Recipe, Assamese style

I think you heard about famous Assamese masor tenga,  the sour fish curries. But have you ever heard about Assamese tenga dail, the sour lentil curry or soup. Assamese cuisine is also famous for sour lentil recipes. Masoor dal or red lentil is often cooked with sour ingredients to make tenga dail in Assamese cuisine. Bogori diya dail or lentil cooked with jujube is an Assamese style dal recipe. Indian Jujube popularity known as 'ber' in Hindi and 'bogori' in Assamese. It's botanical name is
Zizyphus jujuba. Indian jujube is a small round shaped fruit whose taste is sour when raw and becomes little sweeter when ripened. In this recipe I'm using ripened jujubes. Jujube is an winter fruit and generally available between December to March.

Bogori diya dail is a very simple dal recipe.  I cook dal in pressure cooker and therefore need not much effort. It is generally served as a side dish with the main course.

Potato Croquette / Aloo Chop

Potato croquettes are fried potato rolls, coated in breadcrumbs, crispy from outside and soft from inside.  In Indian potato croquettes are called aloo chop or potato chop. 

These potato croquettes are actually very easy to make.  You can use your leftover boil potatoes to make it.  You can also add meat, vegetables, cheese or anything of your choice.  The only rule to make these croquettes are that you have to roll croquettes over breadcrumbs and fry in oil.

Sweet Jujube Pickle / Bogorir Mitha Achar

Ber (in Hindi), Bogori (in Assamese), Botanical name : Zizyphus jujuba is a round shaped sweet and sour winter special fruit found in Assam available around December to March. Sweet jujube pickle or bogorir mitha achar is very popular in Assam. It is generally served as a side dish with the main course.


To make jujube pickle, you must choose only mature and ripened jujubes. Keep under direct sunlight during day time for few days before making pickle.
