Indian Style Carrot Pickle

Indian style carrot pickle is different from other pickles.  Indians use oil and spices in pickling which makes it different from other pickles.

Pickling is an art. Pickling is a process by which fish, meat or vegetables are preserved for out of season use.  The medium of pickling is different from country to country and most of the time brine or vinegar is used.  In India, oil and spices are the main ingredients of pickles and that's why Indian pickles taste different than others. Indian pickles are generally served with rice or roti as a side dish.

Carrot is a root vegetable with a great source of Vitamin A. Carrot is a versatile vegetable in Indian cuisine as various delicious recipes can be prepared from main course, sides and sweets. Carrot pickle is a special carrot recipe which I love to enjoy with roti or Indian bread.

Indian Style Carrot Pickle

India style carrot pickle is unique and more delicious as it is preserved in mustard oil with spices.

INGREDIENTS:
  • 2 cups of grated carrot 
  • 3 tbsp pickle masala*
  • 1 tbsp red chilli powder 
  • 1/2 tbsp sugar 
  • 1/2 tbsp salt 
  • 1/2 cup mustard oil 
  • 1/2 tbsp white vinegar 

*Pickle masala 

Pickle masala is a mixture of different Indian spices which is used in making pickle. Ready-made pickle masala is available in the market and sometimes I use it in making pickles.  But it is preferred to use home made for better flavour. The ingredients for making pickle masala are : 

  • 1 tbsp Cumin seeds 
  • 1 tbsp Coriander seeds 
  • 1 tbsp Mustard seeds 
  • 1/2 tbsp Fenugreek seeds
  • 1 tbsp Fennel seeds 
  • 2 Dry red chilies 
  • 1/2 tbsp Hing or Asafoetida
Process of making Pickle Masala :
  1. For making pickle masala dry roast all the ingredients till fragrant . 
  2. Now let all the ingredients become cool.
  3. In a blender blend all the ingredients.
  4. Keep it in an airtight container. 

METHOD OF MAKING CARROT PICKLE:
  1. Heat oil in a pan.  Remove from heat and keep it aside to cool down. 
  2. In a large bowl take the grated carrots and all the other ingredients except vinegar and mix well. 
  3. Pour the oil into the bowl and mix well. 
  4. Now add vinegar and mix well. 
  5. Now transfer everything in a glass bottle.
  6. Keep the bottles under sun for 1 week till the carrots melt .
  7. Now the carrot pickle is ready to serve. 
  8. You can preserve it for longer periods but make sure your glass container is air tight. Give the pickle bottle under sun once or twice in a month and shake the bottle sometimes so that the oil in the pickle touches all the ingredients well.

Instant Green Chilli Pickle in Mustard Recipe

Hey!  I'm back again with another Green chilli pickle. Hope you are not bored with my continuous pickle recipes. Summer is meant for pickling and I have still many pickles to made in my mind. Hope you liked my previous green chilli pickle recipe. Today I'm going to share an instant green chilli pickle recipe which you can serve to your guests instantly after making. This green chilli pickle is very easy to prepare. The taste of this pickle is hot and sour.  This is similar to the chilli chutney that is usually served in marriage parties. I'm using medium hot Indian variety of  green chillies for making this Instant pickle. Green chillies are dipped into the mustard seeds' paste and the use of vinegar makes the pickle sour to taste. You can serve this pickle with rice or roti (Indian bread)  as a side dish,  but I like to have this pickle with fritters (pakoras) too.

Green Tomato Pickle

Hey there!  here I'm back with another pickle recipe.  Sweet, sour and spicy green tomato pickle is very easy to prepare.

Raw Mango Ice Lollies

The season of raw mango is here. I waited for the whole year for raw mangoes as I love raw mangoes. Mango, the king of fruits is available only during summer and sweet and sour raw mango ice lollies can give the perfect refreshments during hot hot summer. No artificial color is added in these lollies. Raw mango is used to make these ice lollies together with some mint leaves, sugar, salt and some mild spices. Just blend all the ingredients and transfer into ice pop or ice lolly molds. If you don't have ice lolly molds, you can use paper cups and wooden sticks.

Raw Mango Ice Lollies 

INGREDIENTS:
1 cups of raw mango peeled, seeded and diced. 5-6 finely chopped mint leavesPinch of cumin powder 1/2 tsp black salt 4 tbsp sugar 2 cups of water METHOD: In a blender blend all the ingredients until smooth. With the help of a stained, filter the liquid into a jar. Discard the remaining. Transfer the liquid into ice lolly  molds.Freeze until solid.

Peanut and Curry Leaves Chutney

An Indian meal is incomplete without a chutney. Chutney is a type of sauce basically a dry base sauce originating from India. There are varieties of chutney recipes which are served with the main course as a side dish or as a dip with fritters, samosa, pakora, idli, dosa etc.
