Simple chicken curry with coconut milk


Coconut milk is one of the healthiest food on earth. Coconut milk has become a highlight in south Indian cuisines as coconut is largely available there. Coconut milk is a good dairy free alternative which can be used in making many curry dishes. Chicken with coconut milk is a simple chicken curry recipe cooked in coconut milk. I'm using very less spices in this recipe. I'm using fresh coconut flesh to make coconut milk here.

Simple chicken curry with coconut milk :

preparation time : 20 minutes

Cooking time : 50 minutes 

Total : 1 hour  10 minutes 


INGREDIENTS :

• 350 gms of chicken
• 1 cup coconut milk
• 1/2 tbsp ginger garlic paste
• 1 big potato (optional)
• 2 onions finely chopped
• 1 tomato chopped
• 1/3 tbsp cumin powder
•1/3 tbsp coriander powder
• 1 tbsp red chilli powder
• 1/3 tbsp garam masala
• 2-3 tsp mustard oil
• salt taste

METHOD :


For making fresh coconut milk take 1/2 cup of grated coconut flesh. Add 1 cup of water.  In a blender blend well.  Strain the liquid through a strainer. Keep the liquid portion in a bowl. You can either use or  discard the remaining in the recipe . Keep the coconut milk aside.

Peel potato and make 4-5 pieces.

Cut chicken into pieces. Wash under  running water. Keep aside.

In a pan heat oil. Add ginger  garlic paste and chopped  onions.  Fry till translucent.

Add chopped tomatoes. Fry till oil separates.

Add chicken pieces. Fry for 2-3 minutes.

Add Potatoes and again fry for 5-10 minutes.

  Add red chilli powder, cumin powder and coriander powder.

Mix well.  Again fry for some time until oil separates.

Add salt.

Now pour coconut milk .  Mix well. Bring to boil.

Add 2 cups of water. Then cover the lid.  Cook until potatoes and chicken pieces become soft. Add more water if required. Stir occasionally .

Cook until the gravy becomes thicker.
Add garam masala 5 minutes before removing from heat.

Garnish with curry leaves.
Serve hot.

Discard the remaining. Transfer the liquid into ice lolly  molds.Freeze until solid.

INGREDIENTS:
1 wood apple 5-6 tbsp of sugar 1 cup cold milk 4-5 cardamon 1 cup water METHOD: Crack wood apple and take out the pulp. In a blender jar take wood apple pulp, cold milk, sugar, cardamoms and water. Blend it into a smooth liquid. With the help of a stained, filter the liquid into a jar. Discard the remaining. Transfer the liquid into ice lolly  molds.Freeze until solid.

Instant Green Chilli Pickle in Mustard Recipe

Hey!  I'm back again with another Green chilli pickle. Hope you are not bored with my continuous pickle recipes. Summer is meant for pickling and I have still many pickles to made in my mind. Hope you liked my previous green chilli pickle recipe. Today I'm going to share an instant green chilli pickle recipe which you can serve to your guests instantly after making. This green chilli pickle is very easy to prepare. The taste of this pickle is hot and sour.  This is similar to the chilli chutney that is usually served in marriage parties. I'm using medium hot Indian variety of  green chillies for making this Instant pickle. Green chillies are dipped into the mustard seeds' paste and the use of vinegar makes the pickle sour to taste. You can serve this pickle with rice or roti (Indian bread)  as a side dish,  but I like to have this pickle with fritters (pakoras) too.
