Kidney beans or Rajma are very popular in India . It's a good meat substitute for vegetarians. Kidney beans are little black and red in colour and of kidney shapes . These beans have lots of vitamins and nutrients. Kidney beans curry is a simple recipe to serve as a side dish with steamed rice or roti (Indian bread) .
Ingredients :
- 2 cups kidney beans
- 1 big onion, chopped
- 1 tomato, chopped
- 2 cloves of garlic, chopped
- 1 little piece of ginger, chopped
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- 2 tbsp oil
- 1/3 cup chopped coriander leaves
- 2 tbsp cream
- Salt to taste
Method:
- Soak kidney beans in enough water for 4 hours.
- Drain and wash under running water.
- In a pressure cooker take the kidney beans. Add 2-3 cups of water. In high heat cook for 2-3 whistles .
- Let the cooker open itself. Drain and keep the kidney beans aside.
- In a pan heat 2 tbsp of mustard oil. Add chopped onions, garlic and ginger. Fry till translucent. Add chopped tomatoes. Fry till oil separates.
- Now add turmeric powder, cumin powder, coriander powder and red chilli powder. Mix well.
- Pour the kidney beans from the cooker. Mix well. Add salt. Add 1 cup of water and bring to boil. Simmer for 10-15 minutes. Add garam masala and cook for another 5 minutes.
- Add cream. Mix well.
- Add chopped coriander leaves.
- Remove from heat. Serve hot.
