Mustard greens stir fry with dry bamboo shoots

Lai Xaak or Mustard greens is a green leafy vegetable. Mustard greens contain a lots of vitamins and minerals and as such very healthy and very tasty too. I love this green leafy vegetable very much . This vegetable has a wide use in Assamese cuisine.  From making salad, chutney and many veg recipes , a very tasty fish curry recipe can also be made.

Mustard greens stir fry with dry bamboo shoot is a very simple recipe,  made without spices. Assamese recipes are less spicy recipes but much more healthy. Sometimes adding powdered spices spoiled the real taste of the vegetables.  So do try this simple recipe for healthy living.



INGREDIENTS :

• 1 bunch of mustard greens

• 1/2 tbsp ginger-garlic paste

• 1 onion chopped

• 1 potato

• 1/2 tbsp turmeric powder

• 2-3 green chillies chopped

• 2 tbsp dry bamboo shoot

• 2 tbsp mustard oil
&
• Salt to taste

METHOD :

Wash mustard greens thoroughly and chopped into small pieces.

Peel potato.  Wash under running water and cut into small pieces.

Simple chicken curry

This is a very simple chicken curry  recipe which I often cook at home. My kids love this chicken curry. Anybody can cook this chicken curry because  very few ingredients are required and very easy to cook.

So here I am sharing this  recipe. Hope everyone like it.  Serve it as a side dish with steamed rice or roti.

INGREDIENTS :

•350gms of chicken

•1/2 tbsp ginger garlic paste

•2 onion chopped

•1 tomato chopped

•1/2 tbsp turmeric

•1/2 tbsp cumin seeds powder

•1/2 tbsp coriander powder

•1/2 tbsp red chilli powder

•1/2 tbsp garam masala powder

•2 tbsp mustard  oil

•1 potato cut in four pieces ( optional)
&
•Salt to taste

METHOD :

Cut chicken into pieces. Wash under  running water. Keep aside.

In a pan heat oil. Add ginger  garlic paste and chopped  onions.  Fry for some time.

Add chopped tomatoes. Fry till oil separates.

Add chicken pieces. Add potatoes.   Fry for some time.

  Add turmeric, cumin powder, coriander powder and red chilli powder.

Mix well.  Again fry for some time.

Iron-Rich fish curry with spinach

Yes I am anemic.  Every second woman in India is anemic.  Anemia is a disease  caused due to lack of iron in diet.  So we should  include iron-riched food in our everyday diet.

The symptoms of iron deficiency  are of ofen feeling  tired,  pale skin,  hair fall, easily breakable  nails etc.  Anemia or iron deficiency  reduces working  capacity of an women. So we should always include iron riched food  for  a balance  diet.

Spinach is one of the richest source of iron.  So as the fish is also a great source of iron.

Here I am sharing two fish curries with spinach.  The procedure of making these fish curries are almost same.  In one fish curry I am using modhuxuleng and in the other tomato.

Modhulxulend or polygonum microcephalum is a green leafy vegetable  found in Assam.  It's  taste  is sour and is used to make fish curry and chutney.  If this vegetable  is not available , use tomato.
