Fish curry with fiddlehead ferns and elephant apple. Dhakia ou tenga maas

Edibble fiddlehead ferns are available throughout Assam  and is Assamese people's very favourite.  Fish is again very favourite.  The mighty river Brahmaputra and its sub-rivers are wonderful sources of some good river fish. We assamese love fish. We can eat fish everyday. 

The scientific name of Elephant Apple  is DIllenia indica. In assamese it is called Ou tenga. Elephant apple is quite popular in Assam. Many different fish curries can be made using elephant apple. Pickle and sweet and sour chutney can also be made from elephant apple. The edible part of an elephant apple can be eat as raw. My mother used to make a raw elephant apple chutney which is very tastey.
Elephant apple has a sweet and sour taste. Some elephant apple taste very tangy. So before adding to any fish curry you should taste its tanginess. Otherwish excess use of elephant apple in any curry will destroy the taste. So add as much amount of elephant apple as required. 

FISH CURRY WITH FIDDLEHEAD FERNS & ELEPHANT APPLE:

INGREDIENTS:

  • 4 pieces fish, big or small
  • 1 bunch edible fiddlehead ferns
  • 1 elephant apple
  • Ou tenga / Elephant apple
  • 2 tbsp red lentil
  • 1/2 + 1/2 tsp turmeric powder
  • 2 green chillies
  • 1/3 tsp fenugreek seeds
  • 3 tbsp oil
  • 1/2 tsp sugar
  • salt to taste

Method:

  1. Wash fish pieces under running water. Rub fish with salt and turmeric . Heat oil in a pan and fry the fish pieces. Drain and keep the fish pieces aside.  Do not throw the remaining oil.
  2. Wash and chop ferns. Cut the edible soft part of an  elephant apple in 4 -5 pieces.
  3. In a pressure cooker add red lentil, chopped ferns, chillies and elephant apple. Add 2 cups of water. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 5 minutes.
  4. Remove cooker from heat. 
  5. Heat the remaining oil , add fenugreek seeds. When crackling, add turmeric , salt and sugar. Pour everything from the cooker into the pan. Add fish pieces and cook for 5 minutes. 
  6. Remove from  heat. Serve with rice.
